Within the first year the Simpson Querrey Biomedical Research Center was open, the first Beefsteak restaurant in the City of Chicago was built in the center of the lobby.  The restaurant features a large, free-standing kiosk counter in front of the building's floor-to-ceiling windows.  Funded by Noble Peace Price Nominee, and Washington D.C.- based Chef, José Andrés, Beefsteak offers dine in or on-the-go meals with a focus that includes fresh vegetables.

How to Install a Restaurant in the Middle of a Building Lobby

Our team worked with the design team and MEP subcontractors to coordinate the placement of all MEP systems that had to run under the existing floor and be transferred up at the precise points where needed.  Through the floor.
 
Also located in the lobby in Nortwestern University's Simpson Querrey Biomedical Research Center, Slice Pizzeria offers individual pizza slices and beverages to Northwestern University workers, visitors and students.  The adjacent Smart Market offers a self-checkout vending machine stocked with a variety of meals, snacks, and drinks 24/7.
 
Both restaurants were completed in three months.
