A partnership between ThinkFoodGroup, renowned chef José Andrés and Gibsons Restaurant Group, this 17,000 sf dining destination for 110 N Wacker is home to a multi-concept dining pavilion with a fine dining restaurant, raw bar, craft cocktail bar and coffee lounge. Collaborating with a Spanish designer and vendors during the COVID-19 pandemic, our project team utilized Bluebeam Studio and Matterport scans to provide real-time document updates and virtual tours for the distanced owner and design team.  The finishes were sourced from over 12 countries and required careful planning/coordination with the base building to ensure proper installation. Specialized materials include handmade tile that was air freighted from Spain, a custom oven built in Spain that must be installed by the father-son duo who built the item, custom meat display unit, and a 10x10 foot octopus light fixture. Due to the volume of custom design elements, the project team spent nearly ten months coordinating sequencing and procurement before mobilizing. 

Located on the ground floor, Café by the River is a Spanish take on the traditional American coffee shop.

Located on the first floor, Bar Mar is the ultimate gathering space to enjoy a welcome cocktail and some light fare before ascending to the refined steakhouse, Bazaar Meat.
